
Pork chops are great option for grilling – they have got a nice, mild flavour and satiating bite. But, you need to be careful or they dry out quickly. Nobody wants a dry pork chop! Choosing the right pork chop
The magic starts with choosing the right pork chop from the butcher counter.
You must look for:
- Chops that are an inch thick and include the bone. The bone adds flavor and keep the chop juicy while cooking. Avoid super thin chops, as they will overcook quickly and dry out.
- Marbling is those visible little streaks of fat running through the meat. This marbling [fats] melts and makes the meat super flavorful and juicy.
- You also get different cut options like the most common loin chops, the more tender rib chops or a little leaner sirloin chops. The choice is yours, but remember that thicker is better for grilling.
Preparation is Key
It is essential to prep before you fire up the grill.
- Remove the refrigerated raw pork chops 30 minutes before you plan to grill. It gets time to warm up and cook more evenly.
- Patting them dry with paper towels is a crucial next step. The drier they are the better they will sear.
- Finally, give them a good sprinkle of salt and pepper on both sides. You can even add other spices or apply a pre-made rub. It will add lots of flavour and make cooking super easy.
Grilling to Perfection

- Preheat your grill to medium-high. The grates must be clean and apply a little oil to avoid sticking.

- Flip the chops and sear the other side for 4 to 5 minutes.
- After the initial sear, if your chops are very thick turn the heat down to medium-low or place them on the cooler side of the grill for slow cooking.
- Check the internal temperature with a meat thermometer.
- After they are cooked remove them from the grill and let them cool down for ten minutes. It allows the extra juices within to spread across, which you can taste with every bite.
